Have you heard of this dessert? It's incredibly decadent, and as the name says, basically like sex... in a pan. It's SO GOOD.
It's typically made with packaged pudding mix, lots of butter, and heavy whipped cream. Not today, it's not. Because this year, for Valentine's Day, if you have sex in a pan for dessert, you won't feel too full and gross to... y'know... have sex somewhere else. I'm lightening up the whole thing, but don't worry, it's still absolutely delicious. I mean, I didn't change the NAME. Still sex in a pan, after all.
This looks like a lot of steps, and it is. But I promise you it's worth it. Besides, Valentine's Day calls for a little extra effort-on all fronts-right?
Ingredients
Pecan Coconut Crust
1 cup pecans
1 cup rolled oats
pinch salt
4 tbsp coconut oil
4 tbsp date paste (or maple syrup)
Vanilla Pudding
2 cups milk
2 egg yolks
1/4 cup maple syrup
1 tsp vanilla
2 tbsp arrowroot powder
Chocolate Pudding
1 can full fat coconut milk
1/4 cup maple syrup
2 tbsp cocoa powder
1 tsp vanilla
1/4 tsp espresso powder
2 tbsp arrowroot powder
Whipped "Cream"
I can's worth of aquafaba (the liquid in a can of chickpeas...don't barf-it's amazing)
1/2 tsp cream of tartar
1/2 cup organic cane sugar
1 tsp vanilla
Directions
Preheat oven to 350 degrees. Gather Pecan Coconut Crust ingredients.
In a food processor, blend together pecans and oats until they're the consistency of sand.
Add salt, coconut oil, and date paste.
Pulse until combined.
Press into an 8x8 pan and bake for 15 minutes. Let cool.
Layer #1: Vanilla Pudding
In a saucepan over medium heat, whisk together all Vanilla Pudding ingredients.
Keep whisking until the mixture starts to thicken up. About 3 minutes.
Pour over cooled crust and place in fridge for an hour to set up.
Layer #2: Chocolate Pudding (This is very similar to Layer #1)
In the same saucepan over medium heat, whisk all Chocolate Pudding ingredients.
Whisk until thickened, about 3 minutes.
Make sure the first layer is cool, and add this one on top.
Place back in fridge for another hour to set up.
Layer #3: "Whipped Cream"
In a stand up mixer with a whisk attachment, add all Whipped Cream ingredients.
Turn on to a medium-fast speed and leave for 10 minutes.
Be amazed. Layer on top of your chocolate pudding.
This will serve about 12-15 people, or two ravishing lovebirds (and their kids). Maybe call it "Pudding in a pan" in front of your kiddos and then do whatever you want with the rest of it once they're in bed.
