No Measure, No Cook (and it's Delicious) Fresh Cherry Salsa

No measuring or cooking needed to make this gorgeous, delicious snack

Cherry Salsa is easy and delicious and you don't have to measure the ingredients

This recipe made me feel a bit like I was cheating on my husband (or maybe my hairdresser). Last year, I was all strawberry salsa, all the time. I loved it, consuming it passionately and often. But now that I’ve tried cherry salsa, I may never go back. One of the best things about this recipe, as with many salsas and chutneys, is that you really don’t need to measure things because it’s all about what tastes good to you. I’ve given rough estimates to get you started; as you stir, taste, stir and taste again, you’ll know what you want to add a little more of. If your kids are restless, get them to help you pit and/or chop the cherries. They’ll love the zombie hands that are an inevitable part of dealing with juicy, ripe cherries.

Ingredients

Four generous handfuls of fresh sweet cherries, pitted and coarsely chopped
A spoonful of honey
Juice of 1 – 2 limes
A clove or two of fresh garlic, minced fine
Several pinches of salt (add more if you find the salsa too sour for your liking)
A spoonful or three of finely minced red onion
1 or two fresh jalapeno peppers, seeded and finely chopped
A handful of fresh cilantro leaves, chopped

Directions

Combine all ingredients in a medium bowl and let sit at room temperature for 30 minutes, stirring once or twice. Taste and adjust seasonings to your preference. Cover and refrigerate until ready to serve. That's it!
