No Bake Vegan Coconut Fudge

NO BAKE, VEGAN, GLUTEN-FREE...AND DELICIOUS!

No Bake Vegan Coconut Fudge

If you've been following my recipes for any length of time, you will know that I am an enormous fan of coconut. All hail the mighty coconut, provider of energy, antioxidants, and dietary fibre! Numerous studies have shown coconut products to have antibacterial, antifungal, and antiviral properties - and that consumption of coconut helps to boost immunity. Perhaps that makes this coconut fudge a health food!

Well, that might be a bit of a stretch. Fudge is still fudge, and this is a rich treat. Still, it's a no-bake, vegan, gluten-free treat; delicious morsels of coconutty goodness with a chocolatey kick. It's so easy to make, and takes so little time to put together. You don't even need to turn on your oven or stove, so bring it on, summer.

Ingredients

3 cups shredded, unsweetened coconut
1/3 cup maple syrup
1 tablespoon vanilla extract
3 tablespoons cocoa powder

Directions

Place all ingredients in a food processor; process for five minutes, or until the mixture is very smooth and paste-like. Do not under-process: if in doubt, keep processing!

Scrape mixture into a loaf pan, and press firmly to flatten. Set pan in the freezer for 10 minutes.

Remove pan from freezer; cut into squares and keep refrigerated in an air-tight container.

  Enjoy!
