Barbecue season is in full swing, and it's one of my favourite seasons. It isn't the barbecued meals I look forward to, but rather the desserts that follow the main course.
I like to trick myself into thinking that desserts served up in the summer are actually healthy. After all, most will include strawberries, blueberries, raspberries, or some sort of stone fruit.
One of my go-to desserts in the summer is a Summer Berry Crumble. It's easy to throw together. Making it the perfect dessert to bring to the next Summer BBQ that you're invited too! Unless, of course, you'd rather enjoy it for breakfast...
Summer Berry Crumble
Ingredients
Fruit Filling
2 peaches, peeled and sliced
2 nectarines, peeled and sliced
4 cups strawberries, hulled and halved
1 cup blueberries
1 cup raspberries
3/4 cup granulated sugar
1 1/2 tbsp cornstarch
2 tbsp orange juice
A couple dashes of salt
Crumble Topping
1 cup quick oats
1/3 cup easy blend or all-purpose flour
1/2 cup unsalted butter, cubed
A pinch of sea salt
Directions

Preheat oven to 375F.

In a large bowl, add fruit and toss with sugar, cornstarch, orange juice and salt until evenly coated.

In your blender, process the 3/4 cup of the oats with brown sugar, flour and salt. Pour into a small bowl and using your hands mix the remaining oats and butter into the processed mixture until there are no dry spots remaining.

Add fruit to the bottom of a 2 qt 8x11 baking dish and top evenly with the crumble. Bake for 60 minutes.
