Haunting And Healthy Halloween Treats

Halloween is all about fun! And with so much sugar around, here are some ideas to build the meal squeleton of your kids' day on a fun-gory, but healthy and nutritious scale . . . 

Here's a great option for the lunch box:

Mac'n Spiders Lunch

Ingredients: 
 
300g of orange cheddar cheese, grated
1/4 cup milk
1/4 cup butter
1 box (340g) of penne (I use Barilla Plus because it is a great source of proteins, with added legume flours, such as lentils and chickpeas.)
1/2 cup red kidney beans, cooked
1/4 cup black eyed pea beans, cooked
Some spaghettini
 

Directions:

 Rinse the kidney beans and set aside the nicest and biggest ones. Spike them sideways with some pieces of spaghettini.

 Bring water to a boil, add salt and cook the penne according to the direction on the box. Add the beans/spaghetti to the water.

 In the meantime, heat the milk in a small pan, add the grated cheese and mix well. Incorporate the butter and add salt and pepper to taste.

 With a slotted spoon, remove the beans from the cooking water and reserve about 1/2 cup of the hot water before straining the pasta.

 Add the penne pasta to the melted cheese, adding some of the hot cooking water, if needed. Mix well. 

Here are some other fun and easy to make ideas for breakfast and snack:

Smashed Brain and eyeballs cereals is made with granola, lychees filled with blackberries, and raspberries.

Furry monsters are done with pieces of hot-dog sausages, spiked with spaghetti and boiled, and decorated with sliced olives and corn for the eyes and sliced carrots for the ears.
