Delicious and Easy Risotto with Snow Crab and Asparagus

A Risotto in less than 30 minutes? No problem!

Here's one of my easiest risotto recipe and I love it because it combines two of my favorite spring ingredients: snow crab and asparagus.

Ingredients

2 tablespoon of olive oil
1 small onion minced
1/2 cup of white wine
1 cup of rice 
3 cups of warm chicken broth (or any homemade vegetables or meat broth) 
16 asparagus tips, blanched about 2 minutes in hot water
8 snow crab legs, shelled
The juice and the zest of 1 lemon
Kosher salt and fresh pepper to taste

 In a tall saucepan, heat the olive oil and cook the minced onion for about one minute or until it becomes translucent. Do not burn the oil or onions.

 Add the rice and coat it with the oil and onion mixture, then add the white wine, bring to a boil and let it reduce until it is all absorbed by the rice.

 Gradually add your broth, about 1/2 cup at a time, while mixing the rice until it has absorbed all the liquid, and repeat.

 At the very end, mix in the asparagus tips, the snow crab, the lemon juice and zest. Season to taste with salt and pepper.

 If you want to enhance the flavor even more, mix in 1 or 2 tablespoon of butter.  

Tips: the key to success with risotto is the broth, make sure you have the best broth ever, homemade is always better.

Also, since you want your rice to cook evenly, you will prefer a narrow and tall saucepan.

Top Three Foods To Boost Your Energy

Spring is here, but it surely doesn’t feel like it yet! This is probably the longest winter we’ve known and even though we know that the good weather is ahead of us, warm sunny days are still few and far in between and that is tough on our yummy mummy mood.

Try adding these superfoods to your daily menu and notice how they help boost your energy and lighten your moods:

1. Get that Vitamin C

Even though it has been said for years that oranges are the greatest source of vitamin C found in food, we now know that we get the greatest amount of Vitamin C from red and yellow peppers, guavas, kiwis, berries, and even dark green leafy vegetables, like kale. So stock up your fridge with these colourful and tasty fruits and veggies.

2. Experiment with Superfoods

Spirulina, maca and cacao powder are superfoods you'll want to try.  Adding these three ingredients to your morning smoothie will not only taste great, but it will boost your energy like you wouldn’t believe. For those who are not familiar with maca powder, it is a root from Peru that is similar to ginseng. It is helpful for balancing hormones, decreasing stress levels, enhancing strength, stamina, and, yes, libido! It also gives an energy similar to coffee, without the side effects . . . (note: it is not suitable for pregnant or nursing women, and you should research compatibility if you are taking medicine).

3. Go Green

Beyond kale, all types of green vegetables are winners for extra energy and vitality. Try adding something green at every meal and you will see the difference in less than three days. And by saying green, I don’t mean lettuce. Go for spinach, fresh peas, broccoli, green beans, and fresh asparagus. If you want to go a little fancier, try this easy artichoke vinaigrette.

Good food is basic for good health, and that goes for dogs, too, of course!

As mothers, most of us love cooking for our kids and family. And even if we are not always in the mood, we make sure they have the best food on the table to grow healthy and strong. But would you go to the extent of cooking for your dog?

Dog-Gone Good Cuisine is a new and quite original book of easy and healthy recipes for you and your pooch.

Author, Gayle Pruitt, explains, “Research shows that children who have regular home-cooked meals and regularly eat with their families are healthier, fewer suffer from obesity . . . I love the concept, and the pictures in the book are absolutely adorable! And yes, I might try one or two recipes for my dog, like some cookies or the mini muffins, maybe. But I wonder if my dog's digestive system would really like it? It seems to me that dogs are fragile that way. And even if I love my dog Morris very very much, and he is very much part of our family, I don’t see myself making him Salmon Florentine, Pears with Raspberry Sauce, Manicotti, or even Curried Beef Sliders. Sorry, Morris :(
