To me, one of the most exciting times of the year is strawberry season. It means that school is over and summer is here!
Some of my best childhood memories are when my mom would take me and my brother to the strawberry field after dinner, so we could pick our dessert. What a treat!
Then we would bring back cases of fresh strawberries to make pies, purée, jam and one of my favourite dessert, strawberry shortcake. Yummy!
It is still today one of my family’s favourite dessert and we love to prepare it together, just before serving.
Slice ¾ of the strawberries and cook them on med to low heat until they reduce into a smooth and colourful coulis. You can add some maple syrup if you find that the strawberries are not sweet enough.
Tip : Make the strawberry coulis ahead of time, so it has a chance to cool off before assembling the cakes.
Add maple syrup and vanilla to the cream and whip until you get nice and fluffy whipped cream.
Assembling the shortcakes : pour enough strawberry coulis to cover the angel food cake, top with whipped cream and decorate with fresh strawberries.
