Fun Edible Garden Dip and Veggie Plate

Here is another great idea to get kids to eat their veggies: A colourful garden in a plate! The recipe is really easy to put together and your kids will be fascinated by the idea of eating a garden, straight out of the ground, with this edible soil recipe.

Edible Garden Dip

 

Dip

1 cup of plain Greek yogurt
1 tablespoon of mayo
1 lime, juiced
1 tablespoon of chopped dill
Sea salt & pepper to taste

 Mix well and spread in a round serving dish.

Topping

4 thin slices of pumpernickel bread
¼ cup of pitted Kalamata olive

 Preheat the oven at 275C.

  Place the bread and olives on a baking sheet and cook until crisp, for about 1 hour for the bread and up to 3 hours for the olives.

 Add both of the ingredients in a blender and pulse until you reach the desired texture. It should resemble black soil.

 Spread over the dip and top with your choice of veggies.

Suggestions : broccoli flowers, celery with leaves, carrots, red, orange and yellow peppers, mint leave, sprigs of dill and basil, endive leaves, or any other veggies you have in your fridge.
