Kale and Red Cabbage Salad

Have you noticed that we see cabbage everywhere at this time of year, in all kinds of different colours and shapes? My favourite is red cabbage, not only because I love the colour purple, but it is also the one with the most vitamins. Red cabbage has 10 times more vitamin A and twice as much iron as green cabbage. Here is a great recipe to appreciate it even more—with kale and apple, it enhances its flavour and balances the bitterness.

Ingredients:

1 1/2 cups of red cabbage, finely sliced
1 1/2 cups of kale leaves, finely sliced
1 apple, grated
1 green onion, thinly sliced 
1/2 cup of toasted pecans
 
Vinaigrette:
 
1/4 cup of extra virgin olive oil
1 teaspoon of old-style Dijon mustard (with seeds)
Juice of one lemon
Salt and pepper to taste
 
Directions:
 
 Wash and cut your cabbage and kale, and mix together in a big bowl.
 
 Add the grated apple and the green onion, mix in the vinaigrette.
 
 You can let it rest at least one hour before dinner to enhance the flavours but season with the salt and pepper and add the roasted pecans at the very end.
