Cheesy Poutine à la Hot Chicken Recipe

Cheese is one of my ultimate comfort foods because it is linked to my best childhood memories. I remember going to the cheddar cheese factory with my grandmother for fresh warm squeaky white cheddar that we would sprinkle with salt and devour. In my mother’s Eastern Township hometown, getting fresh cheese was part of day-to-day life, just like going to church on Sunday.

Growing up, it was such a treat when my mom made us celery and Cheez Whiz. In fact, she still makes it today when we come to visit. Now it’s my daughter who begs for it! Cheese, after all, is a true French tradition and in my family, we have it every day, whether it is for snacks, breakfast, lunch, or after dinner.

I love making cauliflower casserole, potatoes au gratin (gratin dauphinois), and this reinvented poutine recipe — hot chicken sandwich style!

Poutine à la Hot Chicken

Ingredients:

4 medium potatoes or 8 small ones, cut in wedges
4 tablespoons of olive oil
1 cup of leftover chicken
1 cup of green peas
2 cups of Kraft 4-Cheese Italiano Shredded Cheese
1 cup of homemade gravy, or store-bought
A dash of fresh ground pepper

  Heat the oil and fry your potato wedges.

  In the meantime, heat your gravy.

  When the potatoes are ready, remove the excess fat and place them on a serving dish.

  Place the chicken, the peas, and the shredded cheese on top.

  Pour the hot gravy over it all and let the cheese melt and combine the flavours.

Makes: 4 servings
Preparation Time: 30 minutes

Have fun with this recipe! You can swap the chicken for sausages, the peas with any other favourite veggies and you can also try different cheeses to top it! Enjoy!
