A Kiss of Summer : Strawberry Yogurt Mousse

The Perfect summer recipe

Here is a perfect summer recipe, which I learned during my Italian Cooking Immersion in Parma at Academia Barilla. It is easy to make, and even though it requires a little more time, your patience will be rewarded with ecstatic pleasure, as it is so delish! So, get your mixer ready and let's whip up an unforgettable dessert. 

Ingredients:

1 cup of plain yogurt
1/2 cup of sugar ( I use maple syrup)
1 gelatin sheet
1 cup of cream 35%
1 cup of strawberries
1/4 cup (or less) of sugar
The juice of half a lemon
Whole strawberries and other berries and fresh mint leaves for topping
 
Preparation:
 
 Whip the cream and let it rest in the refrigerator.
 
 Let the gelatin sheet soak in cold water for about 5 minutes.
 
 Meanwhile, in a pan, mix 1/4 cup of the yogurt with 1/2 cup of sugar, cook on medium heat. As soon as it is boiling, take it off the heat and mix in the gelatin sheet.
 
 Let it cool down in the fridge before adding the remaining yogurt. 
 
 Add the whipped cream and pour into your dessert cups. Let them rest in the refrigerator for at least an hour. 
 
 In the meantime, prepare the coulis by blending the strawberries into a sauce with the  remaining sugar and the lemon juice.
 
 Decorate with fresh berries and a mint leaf!

Yields: 4 servings
