20 Minute No-Cook Sundried Tomato Pesto

Bring Back Those Summer Flavours

20 Minute No-Cook Sundried Tomato Pesto

This 20 minute no-cook sundried tomato pesto is a riff on a traditional pesto.  Made with a base of sundried tomatoes and parsley, it is super easy to throw together and jam packed with flavour. | YMCfood | YummyMummyClub.ca

Missing those summer flavours which feel a little fleeting these days? Want an amazing sauce for a quick 20-minute dinner? This recipe is for you!

This is a riff on a traditional pesto. Made with a base of sundried tomatoes and parsley, it is super easy to throw together and jam packed with flavour.  I love to whip up a big batch and then keep it on hand in the fridge. I love it on pasta or rice, but it also works as a great salad dressing or topping for grilled veggies or chicken.  I've even used it as a spread on sandwiches - feel free to get creative with this tasty winner!
