Missing those summer flavours which feel a little fleeting these days? Want an amazing sauce for a quick 20-minute dinner? This recipe is for you!
This is a riff on a traditional pesto. Made with a base of sundried tomatoes and parsley, it is super easy to throw together and jam packed with flavour. I love to whip up a big batch and then keep it on hand in the fridge. I love it on pasta or rice, but it also works as a great salad dressing or topping for grilled veggies or chicken. I've even used it as a spread on sandwiches - feel free to get creative with this tasty winner!
3/4 cup sundried tomatoes
1/2 cup pumpkin seeds
1/2 cup walnuts
1 cup parsley
3 tbsp olive oil
2 tbsp apple cider vinegar
1 tbsp honey
salt and pepper to taste
Blend ingredients in a hand blender, food processor or mini food processor.
Add salt and pepper to suit your taste.
Enjoy!

These perfect little bites of yumminess will become your families new favourite dessert! Muffin-top pans can make any of your regular cake recipes into a delicious set of mini cakes and who doesn't love a mini version of dessert? This happens to be my usual banana bread recipe topped with one of my favourite icing recipes. Your kids will love the combination of banana and peanut butter, but I guarantee the adults will love it, too. At three bites each, you can probably enjoy having several!
Ingredients
Cakes
1/3 cup oil
1/2 cup honey
2 eggs
1 cup mashed ripe bananas
1/4 cup yogurt
1 tsp baking soda
1 tsp vanilla extract
1/2 tsp salt
1 3/4 cups flour
1/2 cup salted peanuts, roughly chopped
1/2 cups semi-sweet chocolate chips
butter to grease the pan
Icing
Directions
Pre-heat oven to 350.
Combine all wet ingredients.
Combine all dry ingredients and mix thoroughly.
Mix together.
Add nuts and chocolate.
Grease your muffin top pan.
Evenly distribute batter across the pan.
Bake for 25 minutes or until an inserted toothpick comes out clean.
Let cool.
Once cooled, top with icing.
Icing
Combine all three ingredients and mix thoroughly.
These power packed protein bars are a combination of everything good you need to be noshing on everyday. They are a perfect way to kick start your day or give you a little pick me up when you are suffering from that mid afternoon crash. Filled with slow burning grains, seeds, nuts and nutrition, they will keep you filled up and going strong on those days you just can't seem to find the time to have a proper meal. I like to keep a few on hand, but be warned, they are so tasty they go fast!!!
Ingredients
1/4 cup chia seeds
1/4 cup black sesame seeds
1/4 cup white sesame seeds
1/2 cup chopped walnuts
1/2 cup chopped salted peanuts
1 cup dark chocolate chips
1 cup chopped dried cherries
1/2 cup hemp seeds
2 1/2 cup rolled oats
1 tsp salt
1 tbsp baking powder
3/4 cup honey
3/4 cup oil (I like avocado or coconut)
1 cup natural peanut butter
1/2 cup sunflower seeds
1/2 pumpkin seeds
butter for a large baking pan
Directions
Combine all ingredients in a bowl and mix together.
Butter parchment and line a large baking pan.
Press mixture into the pan evenly.
Bake at 350 for 1/2 hour or until browned.
Cool slightly.
Cut into even bars.
