These are a weekend favourite at my house. I usually make them when there are a few leftovers in the fridge, some potatoes from another meal, some leftover grated cheese or some sausage left overs. These work well with leftover chicken or steak too, but when we serve them for breakfast I really like the mix of sausage and potatoes. I usually prep the night before, slice up the sausage, dice up the veggies and pan fry the potatoes. That way the next morning these assemble in no time. A few minutes on the stove and you have a melty, crispy and delicious breakfast. They are a great grab and go snack and work well for a weekend lunch too.
Ingredients
3 eggs, scrambled, salt and pepper to taste
2 sausages, cooked
2 tbsps pickled jalapeno peppers (to taste, less if you don’t like the heat)
3/4 cup grated cheese
1/2 cup green peppers, diced
1/2 cup diced onions
1 cup potatoes, cooked
6 tortillas ( I like to use whole grain because they get a little crunchier when toasted)
Directions
Prep all your ingredients; scramble eggs, slice up sausage, dice your veggies and cook up the potatoes. I like to use boiled potatoes which I pan sear to get a little crunch, but really any cooked potatoes work fine as well.
Assemble your burritos. Take a tortilla and sprinkle generously with cheese. Layer on other ingredients. Roll up tortilla into a burrito.
Cook on low heat until bottom is crisp and cheese has begun to melt, about 2 - 3 minutes, turn and crisp other side as well another 2-3 minutes.
Cut into two and serve immediately.
