Spring is finally in the air, and around here that means getting outside.  Weekend mornings are no longer about nesting, cuddling, and making something hearty and warm, but rather having something fast, satisfying, and protein packed on hand.  Spring fever is buzzing in the house and weekend mornings are focused on packing up and getting the family outside.  These babies are one of my favourite grab and go breakfasts.  They are an easy way to get creative with ingredients you have on hand, an easy way to get the kids involved and an easy dish to prep the night before to make this a 15 minute production in the morning - three big wins in my house! Give them a try and feel free to give them your own twist.  The kids will love to throw in the ingredients and roll them up themselves.

Grab and Go Tex Mex Breakfast Burritos

Ingredients

5 eggs
salt and pepper to taste
2 sausages
1 dozen cherry tomatoes, washed and halved
1/2 head iceberg lettuce, shredded
1 cup shredded cheese
8 tbsps sour cream
8 corn tortillas
Hot sauce, if desired

Directions

Remove the sausage meat from the casings, break up into small pieces and stir fry until cooked through, 6-8 minutes.  Feel free to use chicken or turkey sausages as well, if you’d prefer something a little lighter.  You can make sausages a day ahead and keep in the refrigerator until you are ready to use.  

Beat the eggs and add salt and pepper.  Scramble the eggs and set aside.


While the eggs are cooking, heat tortillas in the oven on 350 degrees for about 5 minutes.

Assemble.

Take a tortilla, add some scrambled eggs and sausage.  Add sour cream, tomatoes and shredded lettuce.

Roll up and go!

makes 8 breakfast tortillas

Variations

Feel free to try a few other ingredient combos to change things up:

Instead of sausage, replace with shredded chicken leftovers or crumbled bacon
For a vegetarian twist, omit the sausage and add refried beans and sliced jalapeños
For a different flavour twist, add avocado slices and shredded green and red peppers
Try your own flavour ideas, almost anything goes.
