Crispy Parmesan Asparagus Spears

Delicious Cheesy Bites of Veggie Goodness

Anything covered in cheese and fried has got be good, right? This recipe is no exception.  

I love to serve this at brunch, as an appetizer or as part of a charcuterie plate. They always go, and fast. Fresh asparagus is everywhere during the summer months, and this recipe is a great way to add a crunchy cheesy twist to one of my favourite summer veggies.

I start with some broiled or steamed asparagus, dip it in a light batter and then give it a quick pan fry in a little oil. The results are divine, and I guarantee this will become a family favourite. These are super quick to prepare, and you can cook the asparagus in advance too, making them really easy to whip up right before dinnertime. I love to serve them with some prosciutto on the side, it is a lovely combination. Give them a try and let me know what you think!

Crispy Parmesan Asparagus Spears

1 bunch asparagus
salt and pepper to taste
1 tbsp olive oil (to season)

for batter:

1/2 c flour
1/2 c cornstarch
salt and pepper to taste
1/2 tsp paprika
1/2 tsp garlic powder
1/2 c grated parmesan cheese
1/2 c club soda (plus a little extra on the side in needed to get a runny consistency)

1/2 cup vegetable oil (for frying)

Instructions:

 Prepare asparagus by washing and trimming ends.

 Season with olive oil, salt and pepper.

 Broil for 15 minutes until soft but still crisp.

 Prepare batter by combining all ingredients and letting sit for 3 minutes.  Batter should resemble pancake batter, so add a little more club soda if mixture is too dry.

 Heat vegetable oil in a pan. Dip asparagus into batter and shallow fry until golden brown, approximately 3 minutes.

 Remove and drain on paper towels.

 Serve immediately.
