March Break Meal Planning - Made Easy!

March Break is right around the corner and for many of us the kids are home and looking for something to do. For our family, all the after school activities are on hiatus too, so that means our evenings are a bit more relaxed and perfect for getting the kids into the kitchen.

If you’re looking for a couple of easy kid-friendly recipes they can really "help" make, here’s a list of the recipes my kids and I will be cooking this March Break.

Three Ingredient Slow Cooker Chicken Tacos

I promise, the hardest part is opening up the salsa jar.

You can even prep this one in the morning, head out for some March Break fun then pop in the oven when you get home.

Bacon Cheddar Meatloaf

Meatloaf is one of those home cooked comfort foods that often come from recipes passed down for generations. My favourite (and easiest!) meatloaf recipe is pretty basic so when we decided to invite another family over for dinner and meatloaf was the agreed-upon main course, I wanted to come up with something that was still basic enough the kids would eat it but interesting enough to put on the dinner table for guests. Clearly adding bacon and cheese to create this Bacon Cheddar Meatloaf recipe was the way to go!

Simply chop your cheese, onions and cook your bacon.

Add all your ingredients into a large bowl and mix with your hands until combined.

Put into a loaf pan.

Top with ketchup.

Bake and serve with mashed potatoes.

Ingredients

6 slices bacon, cooked and cut into small pieces.
¼ cup onion, chopped
1 cup cheddar cheese (sharp or medium), cut into small cubes or grated
1 ½ lbs. lean ground beef
¾ cups plain bread crumbs
2 eggs
1 clove garlic, minced
1 tbsp Worcestershire sauce
2 tbsp ketchup, plus a little extra for spreading on top
Pepper to taste

Directions

  Add all of your ingredients to a large bowl and mix with hands until combined.

  Press into standard loaf pan sprayed with non-stick cooking spray.

  Spread a couple of extra squirts of ketchup on top.

  Bake in pre-heated 375F oven for 55-60 minutes.

  Remove from oven, let sit 10 minutes, slice and serve.

Note about the bacon from my daughter: You can cook the bacon to the desired crispness, but my 11 year-old daughter insists that crispy bacon is the best for this recipe.
