I have to admit, since becoming the
Canned Soup Mom just over a year ago I have put many
mommy-win meals in front of my children and a few complete
mommy-fails (which you'll be happy to know I never ever post!).
This Turkey Sloppy Joes recipe, which came straight off of the
Cook With Campbell's website (I am the
Canned Soup Mom after all!), was a total
mommy-win the second my kids got a scent of the home-cooked dinner smells coming from the kitchen.
Forget having to call them to the table, I had to shoo my kids away so I could cook because they were pacing in my kitchen waiting for me to tell them dinner was ready. Thankfully for me, this recipe came together so quickly I didn't have to shoo for long!
Simply cook turkey.
Add onion.
Then your garlic.
Spoon in your Campbell's Tomato Soup with Basil and Oregano (this is pretty much when my kids showed up!)
Pour in your Campbell's 30% Less Sodium Beef Broth, herbs, and peppers.
Let simmer.
Serve and enjoy (or in my kids' case—inhale and ask for seconds)!
Ingredients:
1 tbsp canola oil
1 ½ lbs (680 g) ground turkey
1 medium onion, diced
2 cloves garlic, chopped
2 tsp (10 mL) cumin
¼ tsp (1 mL) black pepper
1 can (284 mL) CAMPBELL'S® Condensed Tomato with Basil and Oregano soup
1 cup (250 mL) CAMPBELL'S® Ready to Use 30% Less Sodium Beef broth
1 red pepper, diced
Directions:
In a large skillet warm oil over medium-high heat, add ground turkey, and cook until no longer pink.
Add onions to pan and cook 3-4 minutes or until soft.
Add garlic and cook one minute more.
Add cumin, black pepper, soup, broth, red pepper, and cook uncovered on medium heat for 15 minutes until thickened.
Serve on crusty buns warmed and with a slice of cheddar cheese if you're in the mood.
