Holy Guacamole; It's Fiesta Time!

Celebrate Cinco De Mayo With These Tasty Recipes


I’ve only been to Mexico once, I gag at the sight of Tequila and piñatas make me nervous. So why do I get so excited about Cinco de Mayo?  Ola? Perfect excuse to eat Mexican food...aka the tastiest food in the americas. 

For past fiestas we’ve made enchiladas or set up a fajita or taco bar. This year we’re keeping it simple. Our menu includes:

Grilled Mushroom Quesadilla, refried black beans and mexi rice (yes, from a package). Served with a simple mexi salad—shredded lettuce, topped with a trio of sour cream, salsa and a GIANT blob of fresh guacamole (guac recipe below) this meal screams "Ola amigas!"

I simply fry them up on the stovetop, but I have my eye on a quesadilla maker and have dropped multiple hints that it would make a fabulous Mother’s Day gift. This madre wants her quesadilla grilled, sealed and served by her own personal cabana boy, por favor.

This Cinco de Mayo, may your avocadoes be ripe (but no too ripe because mushy avocados are a major disappointment) and your margaritas strong and bottomless. *That last point may or may not also apply to the cabana boy.


Here are a few 'key phrases' to get you in the fiesta frame of mind. I'm certain you'll find these quite useful or my name isn't Jennifer Lopez.

"Tengo la goma en el pelo." I have gum in my hair.

“No escriba en mi gato por favor.” Please don’t write on my cat.

"Eso es lo que ella dijo." That’s what she said!

“Tu madre dormio con un payaso de circo.” Your mother slept with a circus clown.

“El burro asada es delicioso!” The roast donkey is delicious!


Party Mummy’s Holy Guacamole

2-3 ripe Haas avocados mashed
2 tsp lemon or lime juice (to prevent avocado from turning brown)
1/4 cup diced tomato
1/8  cup diced onions (Spanish, Vidalia or White)
Black pepper and garlic powder to taste


Combine all ingredients.  Cover and refrigerate a few hours prior to serving (if possible) to allow flavours to intensify.
