These muffins are my new favourite snack. I keep a bag in my freezer and defrost one in the microwave when I am hungry mid-morning. I love how the muffin tastes as if it was just taken out of the oven once I've defrosted it. If you want to make them a bit more child-friendly, add chocolate chips. Otherwise, save the whole batch for yourself and make your kids other muffins! These muffins are high in fibre, low in fat, low in sugar and made in one bowl.
Here is a great sesame chicken recipe your whole family will love. It goes perfectly with stir fried broccoli and brown rice, but leave sesame seeds out if you think it will turn away some eaters. You can even leave the sauce off some pieces of chicken if you think your children would prefer it that way.
I love banana cream pie, and I love Oreos, so when I made a banana cream pie with an Oreo crust last week I thought it would taste even better with whole Oreo cookies in it. The next time I made it I added a layer of Oreo cookies on top of the crust and the result was delicious. Who would have thought bananas and Oreos went so well together, but they do! Add this to unexpected food pairings that taste great together.
This pie is so easy to make. There is no baking involved, but must be done the night before you plan on serving it to allow the Oreos to soften.
I love fried rice: all the different vegetables, scrambled eggs, and saltiness of the soy sauce. It all culminates into a great side dish. This version doesn't actually use any rice at all, but still tastes like it does. Feel free to add any vegetables you like, because anything works. I wouldn't recommend telling your children this isn't made of rice, and they won't know unless you tell them!
I love having people over for brunch and when I do, I enjoy baking something special. When I came across this recipe for French toast scones in a pamphlet for Robin Hood Flour I knew I had to try them. Scones are one of my favourite things to make for brunch. I've made them with lemon and poppyseeds, scrambled eggs and bacon, and blueberries. All delicious flavours, but these French Toast Scones are one of my favourites. I made the batter the day before, took it out to come to room temperature while I was at my son's hockey game, and baked them 20 minutes before my guests arrived.

I love making tacos for dinner. I've even posted a recipe about it on this blog before. I usually make them from scratch but when you;re in a time crunch, there are some great kits available to help speed up the process. There are many available on the market, including some great premium store brands, or the Old El Paso line.
I love this pasta dish because it is so tasty. I also love it because it makes a great dinner and everyone in my family likes it. Simmering the sauce for 5 minutes at the end makes it very flavourful, but not too strong. It's quick, delicious, easy, and pleases everyone, so there is nothing not to like! I use fresh noodles but you can use dried pasta also. Feel free to add grilled chicken on top or on the side; any protein would go well.
I have recently gone back to school to study nutrition, which leaves me very little time for making meals. Lately, I have been trying to make dinners that double as my children's lunches the next day. Soup works very well for this, but I need to keep things exciting in order to keep my children interested and willing to try it. This alphabet soup is easy and quick to make, delicious and nutrtious, and makes a great dinner or lunch. Don't tell your children there is zucchini in it!
Stir fries are one my favourite dinners—they're easy, quick, delicious, and healthy. Combining brown sugar and soy sauce is one of my favouite ways to make a stir fry sauce—I love the sweet and salty combination. This one in particular is delicious and would work well on a beef stir fry, thinly sliced chicken cutlets, or pan fried fish fillets.

My new favourite cookbook lately has been Giada de Laurentiis's Feel Good Food. One recipe in particular that is amazing is the carrot and zucchini mini muffins. Each time I make this recipe I change it slightly making it more user friendly (ie: using the whole zucchini and not just 1/4, adding in flax and chia seeds to boost the fibre content, using whole wheat flour instead of hard to find flours like almond flour and brown rice flour, etc.).
My son loves creamy white Alfredo sauce on his pasta. I have made healthy-ish versions for him but when I came across versions of this cauliflower one on the internet I knew I had to try it. Not only did my son love it, I did too, especially with tons of parmesan on top! If you are trying to keep the recipe dairy-free use olive oil instead of butter, almond or soy milk instead of milk, and dairy-free parmesan cheese.
Once the warm weather begins and I start barbecuing a lot, bean salads begin to enter my mind. Bean salads are delicious, nutritious, easy to make, can be made in advance, crowd pleasers, and can be made larger or smaller depending on how many people you are cooking for. This is my favourite fajita recipe. Forget about buying those little packets of seasoning, make your own. It is cheaper and healthier, and faster!
I used to like putting out toppings for my family to use on their tacos and fajitas but lately have been serving them already rolled and ready to eat and find it much easier and cleaner. Obviously this is not going to work for a picky eater, but only put what that picky eater would like in their fajita and you will not have any problems.
Recently I had a pizza at a restaurant that had a beet puree instead of tomato sauce and slices of melted brie and drizzled honey on top. It was one of the best pizzas I have ever had.
I think this pizza would be excellent cut up in small pieces and served as an appetizer. It would work well made with a baguette instead of pizza crust as well.
