Recently there have been a lot of recipes for avocado toast. Last week when I was in New York I had tomato toast and loved it. I tried to replicate the recipe at the cottage last week-end and it turned out exactly how I wanted it to. Grilling the bread so it is charred is key but if you don't have a bbq just toast the bread until it is well done.
Ingredients:
Preheat grill to medium high heat. Lightly brush each slice of bread with oil on one side. Grill each slice of bread on both sides until lightly blackened. If you are toasting your bread toast it until well done. Remove toast from grill (or toaster) and top with tomato slices and salt. Slice each piece of tomato toast in half. Place on large platter and enjoy!
