Once the warm weather begins and I start barbecuing a lot, bean salads begin to enter my mind. Bean salads are delicious, nutritious, easy to make, can be made in advance, crowd pleasers, and can be made larger or smaller depending on how many people you are cooking for. I have followed intricate recipes before that are delicious, but this past week I didn't have the time, so I threw some things together and it turned out so well I thought I would share the recipe. Feel free to add or substitute whatever you are in the mood for—this recipe is easily adapted to suit any tastes.
Ingredients:
Mix beans, edamame, and red pepper together.
Add salad dressing, mix together lightly. Add more salad dressing, if you like.
Can be made up to 1 day in advance. If not making in advance, mix salad at least 1 hour before serving.
