Serve It Three Ways: Chili Sloppy Joes

A Versatile Recipe That is Delicious Anyway you Serve It!

I had planned on making chili when I started making this recipe but ended up serving it on mini buns, turning it into sloppy joes. So, whether you eat this recipe as chili on rice or as a sloppy joe on a bun, or on top of spaghetti squash it is delicious and healthy either way!

Ingredients:

1 tablespoon vegetable oil
1 onion, diced
2 tsp minced garlic 
½ red pepper, diced
½ yellow pepper, diced
8 oz extra lean ground beef
2 cups tomato sauce or salsa
½ cup chicken or beef stock
2 tsp chili powder
½ tsp cumin

 

  In a nonstick pan sprayed with cooking spray heat oil over medium heat, cook onions for 5 minutes or until soft. Stir in garlic and peppers, cook another five minutes. Add beef, cook for 5 minutes or just until beef is cooked and no longer pink.

  Add in remaining ingredients. Bring to a boil, reduce heat, and simmer, covered for 30 minutes. 

  Serve over brown rice, pasta, on top of multigrain mini buns or whatever you like. I ate leftovers on top of spaghetti squash and it was delicious.

Makes approximately 6 servings

Freezes well. Store in a freezer safe container once completely cool, leave room at the top of the container. Keeps up to 2 months.
