Fall Salad

A Salad Full of Fall Ingredients That is Great as a Side Dish or as a Meal on its Own

This salad is perfect for Fall. I love combining fruit, vegetables, and protein in a salad together. But if that's not your thing, feel free to leave something out. Any vinaigrette salad dressing would work with these ingredients.

Ingredients:

1 sweet potato, peeled and diced or 2 cups diced butternut squash
1 Tbsp olive oil
2 cups arugula, lightly packed
2 apples, peeled and diced
10 slices turkey bacon, cooked according to package directions
 
Salad Dressing (or use your favourite vinaigrette dressing)
½ cup canola oil
3 tbsp red wine vinegar
1 tbsp fresh lemon juice
 2 tsp sugar
½ tsp salt

  Preheat oven to 400.

  Toss diced sweet potato or butternut squash with olive oil. Roast for 20 minutes, toss potatoes, roast another 15 minutes or until slightly crispy on the outside.

  Allow to cool 15 minutes. (Can be done in advance.)

  Cook turkey bacon according to package directions and until crispy.  Allow to cool and break turkey bacon slices into small pieces.

  In a large bowl combine arugula, sweet potato, apple. turkey bacon pieces. 

  Add salad dressing.  Toss lightly.

  Serve.

Makes 4 servings as a side dish or 2-3 as a main course.
