Better-For-You Tacos That Your Family Will Love

Taco night: it couldn’t be any easier. Buy a taco dinner kit, cook the ground beef, chop up your vegetables, put the sour cream and shredded cheese in some bowls, and let everyone make their own dinner. Here is a way to increase the nutritional value of this dinner: add a can of rinsed and drained black beans to the cooked ground beef before adding the seasoning mix. Not only will it make the meal feed more people, it will increase the fibre and iron content.  If you also find that if your children are somewhat put off by the texture of ground beef it helps make it less gritty. Most importantly, don’t tell anyone you did this and just let the easy dinner serve itself.

Ingredients:

1 Taco dinner kit that includes hard and or soft shells (12 in total) and a package of taco seasoning mix
1 lb ground extra lean ground beef OR ground beef substitute
1 can (19 oz) black beans, rinsed and drained
1 cup shredded lettuce
1 tomato, deseeded and chopped
1 cucumber, chopped
1 cup shredded cheddar cheese
1 cup low fat sour cream

  Over medium high heat cook ground beef or ground beef substitute until it is no longer pink, 5-7 minutes, drain.

  Add black beans, seasoning mix and 1 cup water. Bring to a boil and allow to simmer for 5 minutes.

  Meanwhile, prepare vegetables on a platter and sour cream and cheese in some bowls.

  Heat taco shells in a 350 oven for 5 minutes.

  Wrap soft tortillas in tin foil and heat in oven for 5 minutes.

  Let everyone make their own. If your child isn’t into tacos, let them just eat the toppings separately until they warm up to the idea of putting them all together; they will eventually build up to a taco, I promise!
