I take my cheese eating very seriously. There are so many varities and I've only scratched the rind of the cheese world wheel, even though I'm a dedicated enthusiast for ever.
The key to a great grilled cheese sandwich is keeping the ingredients simple. Start with a good bread, decide on a mild or strong cheese, then choose toppings whose flavours and textures complement each other, like the salty crispiness of bacon with the subtle and smooth taste of avocado.
Ingredients
8 slices country rye or other dense multigrain bread
Fry the bacon to medium crispness. If the bacon is overcooked it will break apart in the sandwich.
Cut the bread in approximately 1 centimeter thick slices or ask the baker to slice it using setting/thickness 16.
Butter one side of one slice.
Open the avocados using this simple, no-mess tip and use half per sandwich. Press avocade half into the non-buttered bread slice using a fork.
Drizzle garlic olive oil (apprx. one tablespoon) onto the avocado.
Place 1 ½ slices of Havarti onto the buttered side and top with two slices of cooked bacon.
Close up the sandwich, lightly butter the outside and cook over medium/low heat until the cheese has melted and the bread is lightly browned.
Makes 4 sandwiches.
Serve with a mixed greens and radish salad and light vinaigrette.
BONUS RECIPE: Dessert Grilled Cheese
If you like experimenting with floavout combos that are different but work, then I dare you to try this dessert grilled cheese recipe. It's a bit much to eat an entire dessert sandwich at one sitting, especially if you're also eating a standard grilled cheese as the main course. Shaved, melted parmesan cheese and dark chocolate are decadent together. Share two sandwiches between four or more people as an after dinner treat.
Cut the bread in approximately 1 centimeter thick slices or ask the baker to slice it using the setting thickness 16.
Butter both slices and add a thin layer of shaved Parmesan. Parmesan is slow to melt so keep the slices thin.
Add 4 squares of dark chocolate over the cheese.
Close up the sandwich, lightly butter the outside, and cook over medium low heat until the has melted and the chocolate is runny.
Makes 2 sandwiches.
