Everyone love a good surprise - especially when the surprise involves chocolate. While I usually include my daughters in the baking process, these hidden chocolate kisses cookies were top secret. I simply handed them one of these pretty little cookies and waited to see their reactions.
As expected, taking a bite into what appears to be a simple sugar cookie, only to discover a chocolate kiss inside was a deliciously wonderful surprise. These cookies are super easy to bake. Now that the surprise has been revealed the girls and I will be baking a few batches of these for their classroom Valentine's Day parties. Who will you surprise with these tasty treats?
Ingredients
1 cup room temperature, unsalted butter
1/3 cup packed brown sugar
1/3 cup granulated sugar
1 tsp vanilla extract
2 cups all purpose flour
18 chocolate kisses
1/2 cup icing sugar
2 tbsp water
1/4 cup of decorative edible sprinkles
Directions
Cream together the butter with both sugars, until light and fluffy.
Add in vanilla, mix until combined.
Beat in flour, 1 cup at a time, until dough is totally combined and smooth.
Press a chocolate kiss into the centre of a tablespoon of cookie dough. Roll the dough in your hand, until it covers the entire kiss.
Place cookies on a parchment paper lined baking sheet.
Bake in 375°F oven for 12-15 minutes, until the bottom of the cookie is golden brown.
Place on a rack to cool completely.
Make the glaze by stirring together icing sugar and water. If the glaze is too thin, add a little more icing sugar.
Dip the tip of a fork into the glaze and drizzle the glaze over top of the cool cookies.
Press the sprinkles into the glaze, by pressing the cookie into a bowl of sprinkles...this will ensure the sprinkles stick.
