Summer Berry & Mixed Greens Salad

Summer is all about the berries

Summer is all about the berry. The markets are bursting with colourful, sweet, and sour berries. Where we live summertime means strawberries, blueberries, raspberries, mulberries, and more. It is fairly predictable to add berries to desserts, but we also like to bring our berries into the dinner course.

Looking for a delicious way to get the kids to eat salad? Add summer berries to the greens. A big summer berry green salad makes a fantastic addition to any summer barbecue or potluck. Let the kids help whisk the vinaigrette…kids love watching oil and vinegar magically combine after all the whisking. Watch the kids devour this simple and refreshing summer salad.

Summer Berry Salad

 

Ingredients

Mix of summer greens – baby kale, baby spinach, mesclun mix, dandelion leaves, whatever you can get your hands on
1/2 cup sliced strawberries
1/2 cup whole blueberries
1/2 cup torn raspberries
4 ounces feta cheese (or blue cheese)
4 tbsp olive oil
2 tbsp balsamic vinegar
2 tsp honey
1 tsp Dijon mustard
salt and pepper to taste

Directions

recipe-directions-flower For the vinaigrette, combine oil, vinegar, honey, mustard, salt and pepper in the salad bowl. Whisk together until vinaigrette comes together.

recipe-directions-flower Right before serving the salad, add the greens to the dressing, top with berries and toss to coat the greens with dressing.
