Honey Mustard Coleslaw Recipe

The perfect combination of creamy and classic

Cooking for kids is not always easy. One likes pasta with sauce, one likes pasta with cheese. One likes meat sauce with spaghetti, one likes meat sauce with elbow macaroni. It's like I can never win. In our house it's always a battle when I decide to make coleslaw. One loves creamy, the other loves vinegar. I've been toying with a perfect compromise and think I've come across a dressing everyone can be happy with — honey mustard! Give it a try.

Ingredients:

2 carrots, shredded
1/2 head of green cabbage, shredded
1/6 cup honey
1/6 cup olive oil
Salt & pepper to taste
1.5 tablespoons deli mustard
1.5 tablespoons apple cider vinegar

 Combine the shredded cabbage and carrots in a large bowl.

 Whisk together the olive oil, honey, mustard and vinegar. Season to taste with salt and pepper.

 Add dressing to the cabbage mixture. Mix well to combine and taste for seasoning; add more salt and pepper if desired.
