There is nothing I love more than a crazy busy week. Not.
I loathe busy weeks because it means that I have to give up on certain expectations I keep. Like having a clean house. That's usually the first thing to go. Next, would be the laundry. Want something to wear? Go pull it out of the hamper then. *shrugs*
Currently, my children are walking around in wrinkly clothes in a house that no visitors are allowed in. What can I say, something has to give when you're a busy mom.
You know what doesn't suffer though? Meals. Because no matter what there's always time to prepare a delicious meal in a flash, especially using Campbell's soup.
Wondering what you can cook with a can of soup? Well if you've never checked out the CookwithCampbells.ca website, you really have no idea! Beef recipes, chicken recipes, vegetarian, slow-cooker, crowd-pleasers, kid-pleasers and even gluten-free recipes. Best of all though are the recipes filed under my two favourite words: Quick and Easy.
And boy oh boy, do I need quick and easy this week.
First up, I made this Tex Mex Chicken and Rice Bake.
It took me under ten minutes to assemble it and throw it in the oven. I set the timer for 45 minutes and walked away until it was done. Which means I was being productive while dinner was cooking. As a side note, it made me smile while making this because I remember when my mother was busy working she would often make this Creamy Chicken and Rice Bake. Campbell's has been busy helping in my family's kitchen for a long time.
We didn't finish all of this, so I plan to cut up the rest of the chicken and reheat over nachos in the oven and serve with salsa and sour cream. You know what's even quicker and easier than Campbell's Quick and Easy? Leftovers. Olé!

Love, love, LOVE this recipe. And you want to know how to make it even better? Cheat. Instead of cooking your own chicken, buy an already cooked rotisserie chicken and use 8 oz of shredded chicken from it. Then use the rest for sandwiches for lunches for your family. Oh man, Campbell's is helping me rock the quick and easy around here this week.
But you know what? It's all for naught if the family doesn't love it and fortunately for me they do!
