Breakfast Outside the Box: Oatmeal Apple UN-Muffin Muffins

I've written about the importance of breakfast few times on this blog and I still can't stress it enough. Whether or not you eat breakfast (and what you include in it) will set the stage for your day nutrition-wise. It may even prevent you from unhealthy snacking later on (which can help with weight management). For kids, eating a healthy breakfast is paramount for their school day--it will help them concentrate and focus throughout the day as well as keep them energized all morning. Oatmeal is the number one go-to breakfast in our house during the winter months. What I love about it is that it's nutritious, filling, and minimally processed. And if you think outside the box a little bit, your kids won't get bored of the same old oatmeal (which gets boring for us parents too).

Six Healthy Kid-friendly recipes 

Oats are loaded full of nutrition and boast many health benefits. They are very high in a certain type of soluble fibre called beta-glucans, which has been shown to help with controlling appetite, boosting immunity, improving digestive health, and decreasing the risk of Type 2 Diabetes (controlling blood sugar level and warding off insulin resistance). The soluble fibre in oats also lowers bad cholesterol levels and can help to control blood pressure levels. 

Breakfast Cereal: The Sugary Truth 

Oatmeal Apple UN-Muffin Muffins

Ingredients

2 cups oats
1.5 tsp cinnamon
3/4 tsp baking powder
dash of salt
2 eggs
3 ripe bananas, mashed
1 1/4 cup milk
1/4 cup packed brown sugar
2 tbsp butter
2 tsp vanilla
3 small apples peeled, and chopped finely

Directions

 Preheat oven to 375 F and grease a muffin-tin.

 In a large bowl, mix together eggs, bananas, milk, packed brown sugar, butter, and vanilla until blended well.

 Mix oats, cinnamon, baking powder and salt together in a seperate bowl.

 Combine wet and dry ingredients. Add chopped apple and combine until well blended. 

 Fill muffin-tins almost to the top (they don't expand too much)

 Bake at 375 F for 25 minutes or until golden brown on top. Remove from oven and allow to cool. Serve with Greek yogurt and a sprinkle of cinnamon.
