The Best Oatmeal Raisin Cookie Recipe

I love to experiment with recipes to come up with a healthier yet still delicious version of my own. It's taken me a few years to perfect this one and now I'm sharing it with you! I've added as much oatmeal as I could without making them dry, as little sugar as I could without taking the "cookie" taste away, as little butter as possible without making TOO healthy and I've opted for 100% whole wheat flour instead of a mixture of white and whole wheat. Oh, and my son fully approves of this recipe and your kids will love it too! Pair these cookies with a glass of milk and cut up fruit for a healthy yet yummy snack.

The Best Oatmeal Raisin Cookie Recipe 

Preheat oven to 325 (or 320 if your oven is really hot)

Ingredients: 

1/2 cup butter (softened)
1 1/2 cups packed brown sugar
4 large eggs (room temperature)
4 tsp vanilla
3 cups whole wheat flour
2 1/4 cups large flake oats
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
2 cups raisins

 

 In a large bowl, beat the wet ingredients (eggs, sugar, vanilla and butter) together until smooth

 In another large bowl, sift flour, oats, baking soda, salt and cinnamon until well blended.

 Add the dry mixture to the wet mixture and stir by hand until almost combined, then add raisins and stir until well blended

 Spray cookie sheets or cover with parchment paper and drop spoonfulls of cookie dough about 2 inches apart on cookie sheets

 Bake for 10-12 minutes until a very light golden color on around the edges, but still soft on the inside.

 Allow to cool and transfer to a wire rack.

Makes about 5-6 dozen.
