Roasted Cauliflower with Lemon Tahini Sauce

I've ordered a dish like this in restaurants many times but now I don't have to, I can make it at home. There is something about cauliflower and tahini that goes so well together. I love this dish with grilled chicken or fish, and some rice on the side

Roast Cauliflower with Lemon Tahini 

 

Ingredients

1 head of cauliflower, cut up into small florets
3 tablespoons canola oil
pinch of salt
2 tbsp 2% plain Greek yogurt, optional
1 tbsp tahini
2 tsp fresh lemon juice
3 tbsp water
1 tbsp parsley, chopped, optional
 

Directions 

  Preheat oven to 425. Line a baking sheet with parchment paper.

​  Toss chopped cauliflower with canola oil and lay over parchment paper. Roast in oven for 40 minutes or until lightly browned.

​  While cauliflower is in the oven, mix Greek yogurt (if using), tahini, lemon juice and water together in a small bowl. 

​ When cauliflower is ready allow to cool for 5 minutes. Place in serving dish and drizzle tahini sauce over top evenly. Sprinkle with parsley if using. 

Makes 6-8 side dishes

Colourful Confetti Tuna Salad

Have you tried tuna in oil yet? If you haven't you are missing out because it is so delicious. Do not drain the oil out of the can, instead use it as part of the dressing for your salad. It adds flavour and nutrients. This salad uses up any vegetables you have lying around or fresh ones too, trust me, anything works!

Ingredients

1-2 cans of tuna in oil, not drained
1 carrot, finely chopped
1 yellow pepper, finely chopped
2 Israeli cucumbers, finely chopped
2-3 gherkins, finely chopped
2 hardboiled eggs, grated
plus any other vegetables - chopped grape tomatoes, corn niblets, chopped Romaine, avocado...
fresh dill
Juice of 1 lemon
salt to taste
 
Directions 
 
  In a medium size bowl mix tuna with vegetables. 
 
  Add in fresh dill, juice of lemon. Add salt to taste.
 
 Tastes delicious on top of chopped lettuce or with crackers or bread.
 
Serves 4-6 people
