Sometimes I need a meal with a little bit more of an “adult-flavour” (ie: not something that gets dipped in ketchup) but I barely have enough time to make one dinner, let alone one for the kids and one for mom and dad! A friend of mine recently shared a pork curry recipe that had… wait for it… cream cheese in the ingredients list.

Stay with me, because while curry and cream cheese don’t seem to go together instinctively, the wheels started turning and I wondered if the cream cheese was the magical ingredient that would turn an adult-tasting curry into something the kids would eat too.

And you know what – it was!

By using chicken, veggies my kids like and a green curry paste, my kids and I whipped up this Kid-Friendly Thai Chicken Curry recipe on a weeknight when we had dance, cheer and taekwondo to rush to.

Simply cook your chicken, peppers and onions.

Add cream cheese, curry paste, coconut milk and water.

Add your peas or other frozen veggies your kids will actually eat.

Simmer...

Serve over cooked rice and top with cilantro.

Ingredients

1 tbsp oil
1 lb. chicken breast, cut into bite-sized pieces
1 pepper (red, green, yellow), sliced
½ onion, peeled and sliced into large pieces (so the kids can pick them out)
½ cup cream cheese (you can use light)
¾ cup coconut milk (you can use light)
1-2 tbsp green curry paste
½ cup water
1 cup frozen peas (or other frozen veggies your kids will eat)
Rice, cooked according to package directions
Cilantro for garnish

Directions

  Heat 1 tbsp. oil over medium-high heat in non-stick sauté pan, add chicken and brown evenly on all sides (approx. 4-5 minutes).

  Add onion and pepper and continue cooking for another 4-5 minutes until chicken is cooked through.

 Add cream cheese, coconut milk, curry paste and water and stir until combined. Bring to a boil then reduce heat to low and simmer for 8-10 minutes.

 Add peas (or other frozen veggies), stir until combined and simmer another 2-3 minutes until veggies are warmed through.

 Serve over cooked rice and top with cilantro.

PS: This freezes REALLY well, with or without rice.
