Turkey Sloppy Joes Recipe

I have to admit, since becoming the Canned Soup Mom just over a year ago I have put many mommy-win meals in front of my children and a few complete mommy-fails (which you'll be happy to know I never ever post!).
 
This Turkey Sloppy Joes recipe, which came straight off of the Cook With Campbell's website (I am the Canned Soup Mom after all!), was a total mommy-win the second my kids got a scent of the home-cooked dinner smells coming from the kitchen.
 
Forget having to call them to the table, I had to shoo my kids away so I could cook because they were pacing in my kitchen waiting for me to tell them dinner was ready. Thankfully for me, this recipe came together so quickly I didn't have to shoo for long!
 
Simply cook turkey.
 
 
Add onion.
 
 
Then your garlic.
 
 
Spoon in your Campbell's Tomato Soup with Basil and Oregano (this is pretty much when my kids showed up!)
 
 
Pour in your Campbell's 30% Less Sodium Beef Broth, herbs, and peppers.
 
 
Let simmer.
 
 
Serve and enjoy (or in my kids' case—inhale and ask for seconds)!
 
 
Ingredients:
 
 
1 tbsp canola oil
1 ½ lbs (680 g) ground turkey
1 medium onion, diced
2 cloves garlic, chopped
2 tsp (10 mL) cumin
¼ tsp (1 mL) black pepper
1 can (284 mL) CAMPBELL'S® Condensed Tomato with Basil and Oregano soup
1 cup (250 mL) CAMPBELL'S® Ready to Use 30% Less Sodium Beef broth
1 red pepper, diced
 
Directions:
 
  In a large skillet warm oil over medium-high heat, add ground turkey, and cook until no longer pink.
 
  Add onions to pan and cook 3-4 minutes or until soft.
 
  Add garlic and cook one minute more.
 
  Add cumin, black pepper, soup, broth, red pepper, and cook uncovered on medium heat for 15 minutes until thickened.
 
  Serve on crusty buns warmed and with a slice of cheddar cheese if you're in the mood.

Make The Night Before For Easy Heat Up The Next Day

Easy Scalloped Potatoes Recipe

Scalloped potatoes are among my favourite kind of potatoes and are the best starchy side dish to ham. While I admit this side dish takes a bit more effort than your typical Canned Soup Mom recipe, I promise this is a simplified version and because these potatoes always taste better the next day you can make them the night before.

Simply butter a casserole dish.

Add a layer of potatoes.

A layer of butter.

A layer of flour.

A layer of cheese.

Repeat and top with a final layer of potatoes and top with dots of butter.

Pour on the milk mixture.

Cover and bake.

Remove tin foil, add more cheese and continue baking until soft and melty.

Enjoy!

 

Ingredients:

8-10 medium potatoes (Russet or Yukon Gold are best)
¼ cup cold butter, cut into small squares
2 Tbsp. flour
2 cups shredded cheddar cheese, divided (old or medium cheddar is best)
2 cups milk (I used 2%)
1 tsp. coarse salt
1 tsp. dried mustard or paprika
 

Directions:

  Wash, peel and thinly slice potatoes.

  Butter 9 x 13 casserole dish.

  Layer 1/3 potatoes, 1/3 butter, 1 tbsp. flour and 1/3 cheese.

  Repeat (potatoes, butter, flour, cheese).

  Follow with final layer of potatoes and top with remaining 1/3 butter.

  In bowl mix milk, salt and mustard and pour over top of potatoes.

  Cover with tin foil and bake in preheated 350F oven for 1 – 1.5 hours until potatoes are soft and bubbly.

  Sprinkle with remaining cheese and bake uncovered for another 15-20 minutes.

  Serve with your favourite entrée like this Slow Cooker Balsamic Maple Glazed Ham and enjoy!

Leprechaun Cookies Recipe

Green JELL-O Makes These Cookies A St. Patrick's Day Favourite

Leprechaun Cookies Recipe

My sweet five-year-old son asked for green cookies this weekend. When he asked the conversation went kind of like this:
 
Me:   Why green?
Him:  Because my teacher is telling us about Leprechaun Day.
Me:   You mean St. Patrick's Day?
Him:  No the one with the Leprechaun.
Me:   I'm sure that's St. Patrick's Day.
Him:  Okay. Sure (insert shoulder shrug here). I like Buzz Lightyear too and he's green.
 
Moral of the story, I don't think I should hold out hopes for any debate club trophies coming home but if my boy wants green Leprechaun Cookies then Green Leprechaun cookies he shall have.
 
Simply throw all the yummy stuff into a bowl.
 
 
Mix until green.
 
 
Add your flour, baking powder and salt.
 
 
Roll into balls.
 
 
Flatten with bottom of a glass.
 
 
Then add sprinkles.
 
 
Or decorate with a fork.
 
 
Or Smarties (or all of the above!).
 
 
Bake and enjoy!
 
 
Ingredients: 
 
 
  • 3/4 cup butter
  • 1/2 cup sugar
  • 85g package of lime JELL-O
  • 2 eggs
  • 1 tsp vanilla
  • 2½ cups of flour
  • 1 tsp baking powder
  • 1 tsp salt
 
Directions:

  In a large bowl (or the bowl of your stand mixer) add butter, sugar, eggs, JELL-O and vanilla and mix until creamed (I use my paddle attachment).

  In separate bowl add flour, baking powder and salt and gently stir until combined.

  Gradually add flour mixture to JELL-O mixture and mix until combined.

  Roll the dough into 1½" balls and place on parchment lined baking sheets.

  Using the bottom of a glass or bowl slightly flatten each cookie. You may need to dip your glass into a bit of flour or wipe with a damp cloth after flattening a few cookies to prevent sticking.

  Decorate as desired (see above for using sprinkles, a fork or Smarties).

  Bake in a pre-heated 350F for 10-12 minutes.

  Move to baking rack and allow to cool completely.

Bonus: These cookies can be made with any colour JELL-O to suit any theme! Think blue and pink for baby showers or red and green for the holidays.
 
 
Adapted from a hand scribbled recipe a co-worker gave me almost 10 years ago.
