The World's Best Chocolate Cake Recipe

The Worlds Best Chocolate Cake
This decadent Chocolate Rice Krispies Crunch Cake recipe is a tri-layered fudgy chocolate cake that's filled with chocolate-coated Rice Krispies and slathered with creamy, smooth chocolate frosting.
 

Ingredients:

 
Chocolate Cake Recipe
 
¾ cup semi sweet chocolate, chopped
1 cup cocoa powder
1½ cups boiling water
2½ cups + 2 tbsp flour
3 cups sugar
3 tsp baking soda
tsp baking powder
tsp kosher salt
1½ cups buttermilk
¾ cup vegetable oil
3 eggs
2 tsp vanilla extract 
 
Milk Chocolate Rice Krispies Crunch
 
3 cups Rice Krispies cereal
2½ cups milk chocolate chips, melted
 
Creamy Chocolate Frosting
 
1 cup butter, softened
8 oz unsweetened chocolate, melted and cooled
6 cups icing sugar
¾ cup whole milk
 

Directions:

 
1) For the cake, preheat oven to 350ºF. Coat three 9-inch round cake pans with non-stick cooking spray. Line the bottom of each pan with parchment paper and lightly spray again. Dust the pans with flour, shaking out the excess. 
 
2) In a medium bowl, whisk together semi-sweet chocolate, cocoa powder, and boiling water, whisk until smooth. Set aside. In a large bowl, mix together flour, sugar, baking soda, baking powder, and salt. In a third bowl, whisk together buttermilk, oil, eggs, and vanilla. 
 
3) Whisk the egg mixture into the flour mixture. Add the melted chocolate mixture and continue to whisk until all ingredients are well combined. Pour batter into cake pans and bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool cakes completely before frosting.
 
4) For the Rice Krispies Crunch, line a baking sheet with parchment paper. In a large bowl, combine Rice Krispies and melted chocolate and fold together until cereal is completely coated. Evenly spread mixture onto the baking sheet and place in the freezer for 20 minutes. Remove and chop into small pieces. Can be made ahead and refrigerated until ready to use. 
 
5) For the frosting, using an electric mixer, beat butter, melted chocolate, icing sugar, and milk on low speed. Gradually increase speed to medium until frosting is fluffy. 
 
6) To assemble the cake, place one 9-inch chocolate cake on a large plate, trim top to make it even and flat all over. Spread ¾ cup frosting on top and cover with 1 heaping cup of Krispies Crunch. Top with another 9-inch cake and repeat with frosting and crunch. Top with the final cake and frost. Cover the top of the cake with remaining crunch.

Not only does this quick and simple recipe serve up fresh vegetables and spiced ground chicken you can hold in the palm of your hand, but it’s also a healthy choice for a weeknight family meal.

Asian Lettuce Wraps

Ingredients:

1 tbsp (15 mL) sesame oil
1 lb (500g) ground chicken
1 tbsp (15 mL) Club House Prepared Minced Garlic
1/2 cup (125 mL) each finely chopped onion, carrots and mushrooms
1 1/4 cups (300 mL) water
1 tbsp (15 mL) light soy sauce
1 package (47g) Club House Shepherd’s Pie Seasoning Mix
1 1/2 tsps (7 mL) each Club House Ground Ginger and Club House Course Ground Black Pepper
14 iceberg lettuce leaves (1 medium head)

  In a large skillet, heat sesame oil over medium-high heat. Brown chicken, garlic, onion, carrots and mushrooms. Drain off fat.

  Stir in water, soy sauce, Club House Shepherd’s Pie Seasoning Mix, Club House Ginger and Black Pepper. Bring to a boil. Reduce heat and simmer 10 minutes.

  Place 1/4 cup (50 mL) chicken mixture in lettuce leaf, fold in ends and roll.

Serves: 7 (14 wraps)
Prep Time: 15 minutes
Cooking Time: 15 minutes

  Recipe notes:

  1. These Asian Lettuce Wraps also work as a great appetizer.
  2. The Asian filling would also be great rolled in tortillas, put on top of a salad or used to make eggrolls or dumplings.
  3. You can substitute ground turkey, ground pork or ground beef for the ground chicken.
  4. To make meal prep time faster, wash and cut vegetables in advance and store them in an airtight container in the refrigerator.

Cranberry Orange Bread
What could be better than "breakfast bread?" Really, this is a bread-shaped cake. Yes, cake. Yes, you can eat delicious cake for breakfast, especially when you bake up this Cranberry Orange Bread, a citrus-flavoured, cranberry-studded loaf that is guaranteed to start your day off the right way.
 
Ingredients:
 
2 cups flour 
3/4 cup sugar 
1 1/2 tsp baking powder 
1 tsp lemon zest 
1/2 tsp baking soda 
1/2 tsp kosher salt 
1/4 cup butter, softened 
1/2 cup orange juice 
1/4 cup cranberry juice 
1 large egg 
1 1/2 cups chopped cranberries, fresh or frozen 
2 tbsp cinnamon sugar
 
Directions:
 
 Preheat oven to 350°F. Coat a 9x5-inch loaf pan with non-stick cooking spray. 
 
 In a large bowl, combine flour, sugar, baking powder, lemon zest, baking soda, and salt. With a fork, cut in the butter until the mixture is crumbly. 
 
 In a small bowl, whisk orange juice, cranberry juice, and egg. Pour over the flour mixture and add the cranberries. Gently stir until the flour disappears. Pour into the prepared loaf pan and sprinkle with cinnamon sugar. Bake 55-60 minutes or until a toothpick inserted comes out clean. Allow to cool in the pan for 10 minutes before removing and cooling on a wire rack. 
 
(Yield: 10 slices)
