No More Rotting Potatoes!

I'm the only one in my house that likes potatoes, so even if I bought a 5lb bag, I would have to throw a fair amount into the compost bin later on. Buying individual potatoes isn't the answer, because they're crazy expensive! So, I read a tip online and decided to try it, and lo and behold, it WORKED!

When you bring home a bag of potatoes, take them out of the plastic bag right away and put them into a cardboard box lined with newspaper. Layer a few apples in with the potatoes, then close the box to keep the light out. (Light causes the green on the potatoes, which can be toxic to pregnant mums and small kids, if they get enough of it.)

You don't have to specifically buy apples to layer inI usually have one or two left in the fruit bowl that might have a ding or are starting to wrinkle up themselves. The apples give off methane gas, which usually speeds ripening and rotting with other fruits and vegetables, but potatoes love the methane! It prevents potatoes from ripening and rotting! So, now I can buy that 20lb bag at Costco, because they'll keep for at least six months!
