Store bought falafel is tasty and EASY to serve as a protein rich, meatless alternative. We love the bite-sized ones, to turn into sliders for kids.
1. Prep falafel according to package directions (you can also buy a mix to make from scratch if you’re game)
2. Top with tzatziki and micro-greens
3. Serve with a cucumber / tomato / feta salad
