We all know that breakfast is the most important meal of the day, but if you’re family is like mine, by June the weekday rush can start to make things feel a little ho-hum in the morning. It can be hard enough to get tired kiddos to shovel in a bowl of cereal, let alone something more substantial like eggs and toast, before it’s time to race out the door.
My solution is to have grab-and-go breakfasts ready to shake up the breakfast blahs. Some of our favourites include Apple Pie Cheddar Biscuits [1], Carrot-Oatmeal Muffins [2] and Apple Cinnamon Snacking Squares [3]. Now that the hot weather is here, these parfait-like popsicles have become the most-requested breakfast item. I’m thrilled because they are so easy to make and super nutritious too. You can find inexpensive popsicle molds at most large grocery stores but you can also use small cups and popsicle sticks instead.
Berry Blast Granola Yogurt Popsicles
Ingredients:
Fruit Yogurt
Granola (store bought or homemade)
Fresh or frozen berries
Directions:
- Slice larger berries so they’ll fit into your popsicle molds.
- Using small spoons, put a layer (about 1/2 inch thick) of yogurt in the bottom of each mold.
- Add a teaspoon or so of granola – just enough to cover the yogurt.
- Add a few sliced or whole berries.
- Repeat layers, ending with yogurt at the top.
- Tap the molds on the counter so the layers will compact a little.
- Put the tops on the molds and freeze until firm.
