Being in the crazy stage of life that I'm at right now (with three young energetic kids and a growing small business), I don't have a lot of extra time to bake, even though I really enjoy it and feel that it's important to home-make most of our baked goods and desserts. That's why I love this berry crisp recipe — I always have either fresh or frozen berries on hand, as well as oats, butter and sugar!
I threw this dessert together in about five minutes on Fathers Day (when I realized that I had completely forgotten to make a dessert!) and it baked while we were eating supper. Everyone loved it (and it made enough that we had lots leftovers). In fact, the morning after, I had it for breakfast with some plain Greek yogurt (which cut the sweetness a little bit and added some protein).

Preheat the oven to 350°F. Butter a 9-inch glass baking dish
Gently combine the berries with the sugar, flour and cinnamon; place in the prepared baking dish
Topping: Combine oats, flour, sugars and salt in a bowl. Use a pastry blender or 2 forks to work in the butter until topping resembles coarse meal. Sprinkle evenly over the berries.
Place the pie plate on a baking sheet. Bake in the center of the oven until the fruit is bubbling and the topping is golden brown, about 1 hour. Remove the crisp to a rack to cool slightly. Serve in dessert bowls with vanilla ice cream.
