Quick & Easy Maple Mustard Glazed Salmon

A Hint of Sweet For A Lot of Delicious and Nutritious

Like many moms juggling work, life, and household duties, I find it hard to carve out the time to make elaborate meals each night. For whatever reason, not even meal planning seems to work for my son and I, so we often end up standing in the kitchen staring into the refrigerator asking one another what we feel like eating. We follow a largely plant-based diet, but we do enjoy fish on a pretty regular basis. One of our favourite recipes? This maple and mustard glazed salmon!

Not only is this dish easy to make, it also packs an amazing nutrition punch. Salmon is low in calories but high in healthy fats like omega-3s, proteins and vitamins. Pair your salmon with rice, garlic mashed potatoes, or a light green salad. For a smoky twist, barbeque instead of baking.

Ingredients

4 fillets salmon (I buy locally farmed Atlantic salmon)
2 tbsp Maple Syrup (I buy local Maple Syrup)
2 tbsp Dijon Mustard (Use grainy Dijon or Dijon honey mustard - your choice)

 

Directions

Rinse salmon fillets under clear, cool water and pat dry.

Gently press excess moisture out of each fillet.

Prepare a baking dish with no-stick spray and place salmon fillets inside, spaced evenly. Set aside.

In a small bowl, mix together maple syrup and mustard until totally blended.

Spoon maple-mustard mixture over salmon.

Bake at 350 degrees Celsius for 20-30 minutes. Do not overcook.

Devour.
