My Chicken Parmesan Meatballs

Right at this moment, I am sitting in one of my favourite bars in the world—the Fairmont Royal York Library Bar.



It's my favourite for many reasons (not only for the yummy snacks and drinks and the amazing service!) but mostly because it reminds me of my grandfather who used to work on the CP Rail and the CP Rail used to own the Fairmont.

Today I'm in Toronto on business. I taught a seminar on using social media in sales and I've been on my feet for over 8 hours. Needless to say, I'm tired. I probably could have caught the 5:30pm train home, but instead it's 5:15pm and I am sitting across from Union Station with a VIA 1 ticket for 7:05pm.

But don’t worry—my kids aren’t starving while I’m lounging. While I’m here, my hubby is reheating my super easy recipe for Chicken Parmesan Meatballs which I posted below for you.

Oh sure, I could have caught a cab instead of walking a few blocks and done the mad-commuter-dash through Union Station and made it home just in time for stories and bedtime but instead I'm having some me time. Some Secret Mom Behaviour (SMB) time surfing Pinterest, answering emails, and writing to-do lists. It might not seem like a luxury to some but I am a busy working mom and time to just sit, surf, and get a bit organized is rare and luxurious.
 
I’m not going to lie, I’m also thinking about how back-to-school is one of the most stressful times of year for moms. We're so busy shopping and organizing to get the kids prepared for school and all the other activities that start in September too, we often forget about ourselves. That's why it's important to squeeze in your favourite Secret Mom Behaviour whenever you can (even if it involves hiding out like I am right now!)
 
Mr. Christie's Fruit Krisps wants to make sure that this back-to-school season you take a little time for yourself doing whatever Secret Mom Behaviour adds joy to your life so they asked some of the moms here at YMC to let you in on our SMB. I also wanted to share this recipe with you to make getting away for a little SMB time even easier!
 
That's right, when I go away on business I tend to leave some of my family's favourites ready and waiting for heating up which should be easy enough for my non-cooking husband. At this moment he should be boiling a pot of pasta and heating up some homemade tomato sauce and these Chicken Parmesan Meatballs.
 
This is the kind of recipe I always double when I'm making it for dinner because they freeze so well in large freezer bags. As an added bonus you can reheat the whole bag for dinner or pull out a few to defrost and toss into a thermos for school lunches!
 
The next time you're in need of your own Secret Mom Behaviour time, be sure to whip yourself up a batch of these Chicken Parmesan Meatballs to keep in your freezer just in case!
 
Simply mix.
 

 
Roll.
 

 
Mix again.
 

 
Brush.
 


Sprinkle, bake and enjoy!


 
Ingredients:



1 1/4 pounds ground chicken
1/2 cup breadcrumbs
1/2 medium onion, chopped into small pieces
1 tbsp. dried parsley
1/2 cup Parmesan cheese, grated
1 cup mozzarella cheese, shredded
1 clove garlic, minced
1 egg, whisked
Coarse salt and pepper to taste

1 cup tomato sauce
3 tbsp. olive oil
3-4 tbsp. Parmesan cheese, grated

  Toss all of your ingredients into a large bowl (except the last three) and using your hands mix until combined.
 
  Roll mixture into ping-pong-ball-sized meatballs.
 
  In separate bowl, mix tomato sauce and oil.
 
  Brush each meatball with tomato sauce topping.
 
  Sprinkle Parmesan cheese onto each meatball and bake for 15 minutes in the top third of a pre-heated 400F oven.
 
  Serve with more sauce over pasta with crusty bread!
