A Twist on Pickles: Sweet & Spicy Pickled Apples

Pickled apples are a delicious and versatile treat

If you’re a fan of traditional pickles, maybe it’s time to branch out (pun intended) to pickled fruit. Not only are pickled apples fast to make and delicious, they add a bright burst of colour to any meal. I love this recipe because you can make just one jar or several and once the brine has worked its magic for a day or two, the apples are ready to be enjoyed. My kids love putting them in grilled cheese sandwiches while I enjoy scattering them over salads or munching with a handful of nuts for a mid-afternoon pick-me-up.

One of the best ways to get kids eating what we cook for them is to have them help us in the kitchen. But only on occasion, because any more than that and no one would ever eat a hot meal. If they make it, they will eat it. If you make it, they might scrunch up their noses. It's one of the tenets of parenting.

These lemon squares are not just good for Passover, they are actually DELICIOUS lemon squares! Lemon squares are a sweet and tart treat any time of the year, but these ones are suited perfectly for Passover. And bonus: they're easy to make with just a few ingredients.

 

Ingredients:
1 can coconut macaroons
1/4 cup coconut oil, melted
1 1/2 cups sugar
4 eggs
1/2 cup lemon juice (squeezed from 1 large lemon)
2 tbsp potato starch
powdered sugar for dusting on top

Growing your own rock candy sugar crystals is a delicious science experiment to do with kids

If your kids are like mine, their favourite cooking endeavours probably involve sweet stuff. At our house, cookies came before casseroles, cakes before cauliflower. As they got older, they became quite intrigued with aspects of food science, especially the chemical reactions involved in baking. This tasty experiment requires just a little prep time followed by a lot of patience but kids will have a great time watching the crystals grow and, of course, sampling the finished product. It would be a great project for a school break or for homeschoolers.
