Summer is the time for running through the sprinklers, camping, sleeping in until noon (if you have young kids, you can forget about that one!), and of course, eating your body weight in ice cream. Sorry, winter - you have your own great qualities - but my heart belongs to summer.

In the hot summer sun, people often turn to cold beverages to cool down but I reach for ice cream. There is no better time than summer to try some new, no-bake desserts and Eagle Brand Sweetened Condensed Milk one of my favourite ingredients to make my summer desserts a breeze. It's actually a key ingredient in this recipe I'm about to share with you. You'll be looking for a spoon when you hear about all the delicious ingredients in my Ultimate S'mores Ice Cream Sundae. You start by making your own ice cream and before you say "but I don't have an ice cream maker!" let me assure you that making this recipe is incredibly easy and you don't need an ice cream maker. The only tool you'll need is a regular hand-held mixer. This recipe is sure to lead to some drooling during your next summer get-together. Let's get started!

Ultimate S'mores Ice Cream Sundae

 

Ingredients: 

4 cups heavy cream (35%)
1 can Eagle Brand Sweetened Condensed Milk (300 mL)
1 jar marshmallow fluff (198 g)
1/2 cup & 1 tablespoon graham cracker crumbs (separated)
1/2 cup Smucker's Hot Fudge Topping
1/2 cup mini marshmallows
4 graham crackers
1 chocolate bar
Smucker's Chocolate Magic Shell

Directions: 

  In a large bowl, beat heavy cream on high until soft peaks form. 

  Add Eagle Brand Sweetened Condensed Milk & marshmallow fluff and beat just until mixed. 

  Stir in Smucker's Hot Fudge topping (cool, not heated) and 1/2 cup graham cracker crumbs. Stir until well blended. 

  Pour ice cream mixture into two loaf pans and put in freezer for 6 hours. 

  Before serving sundae, place mini marshmallows on a foil-lined baking sheet and broil for about 15 seconds to lightly toast the marshmallows. The marshmallows burn quickly, so keep a close eye on them. 

  Let the marshmallows cool before placing them on the sundae. 

  Scoop ice cream into a serving bowl, add in large pieces of the graham crackers & chocolate bar. Place cooled marshmallows on the ice cream. Top all of this with some Smucker's Chocolate Magic Shell and sprinkle one tablespoon of graham cracker crumbs over top. 

Serve with 4 spoons and plenty of napkins!
