I have a picky eater at home, so I need to find ways to sneak fruits, veggies, and fibre into his diet. He's a carb-loving kid and loves pancakes, breads, and muffins, so I've found a trick to add fibre and more of the good stuff into the things that he loves to eat—without forgoing any taste.
For any recipe that calls for flour—from pancakes to muffins—I half the amount of flour I use and substitute ground chia seeds and oat bran, instead. For example, if the recipe calls for two cups of flour, I use:
