Chicken and Bacon Sandwiches with Arugula Mayonnaise Recipe

These are some of the best sandwiches I've ever eaten and a perfect way to use up leftover roast turkey or chicken. The mayonnaise is a perfect complement to the salty bacon, with a little bit of lemon to tie it all together. Don't leave out the pickled jalapenos, they aren't too spicy and add a fantastic element!

Ingredients:

1 1/2 cup arugula, chopped plus 2 oz of whole arugula
1/3 cup chopped fresh chives
3/4 cup fresh basil leaves, chopped
1 lemon
1/2 cup mayonnaise (approx). Make it yourself!
1 pound sliced roast chicken or turkey
8 pieces of bacon, cooked until crisp
3 tomatoes, sliced
jarred picked jalapenos
4 large ciabatta rolls, split

  In a bowl, mix together the chopped arugula, chives, and basil leaves with 1/2-3/4 cup mayonnaise.  Zest the lemon over top, season with fresh cracked pepper,  and stir together well.  Set aside.

  Toast the buns until golden.  Spread each half with some of the mayonnaise.  On one side, stack the turkey, whole arugula, bacon, lettuce, and some jalapenos.  Cover with the other half of the bun and press together.  I often put a toothpick topped with an olive in each half to keep them together!
