Make-it -in-Less-Than-Two-Minutes Blender Salsa

This is the easiest salsa you'll ever make.

I love me a good fresh salsa and can eat it by the spoonful. This is good for my health (tomatoes have lycopene which can help prevent certain cancers) but not good for my pocketbook because buying fresh salsa is expensive.

And who the heck wants to spend all their time chopping up tomatoes, onions, garlic, and cilantro to make your own? Not to mention the hell that is forgetting you just cut up jalapeno peppers and rubbing your eyes.  

Thus my “Takes Less Than Two Minutes” Blender Salsa was born. 

Ingredients 

2 small containers of organic cherry tomatoes (trust me on this and splurge for the organic)
½ a large sweet onion outside skin removed
1 jalapeno with the end cut off
Two cloves of garlic
Handful of cilantro leaves
Juice of one half of a lime
Salt to taste


Directions 

 Here’s where I’m going to blow your mind. Throw the first five ingredients into the blender. Squeeze in the lime juice and hit the switch on that blender. You may need to cut the half onion into quarters to get it to fit but other than that, there is no chopping needed. 

​ You’ll have to stop a couple of times to push down the non-blended ingredients to the bottom but it really is as simple as that. 

​ Hint: One whole jalapeno makes a spicy salsa. For a medium salsa use half a jalapeno with the seeds. For mild, use half a seeded jalapeno. 

Enjoy your salsa on everything from fresh grilled chicken and fish (my fave), to dipping with chips.
