I'm a self-professed snackaholic. I try my best to eat healthy. However, I struggle daily with resisting the urge to dive into sweets. Most days I can force myself to enjoy a slice of pineapple in lieu of a piece of chocolate, but sometimes that pineapple just isn't enough and I need something more. Something a little more indulgent.
This is where my love for microwaveable mug cakes enter the picture.
Imagine a fresh, piping hot gooey chocolate chip cookie hooking up with a cake and making babies. Sounds irresistible, right? It is.
What if I told you that you could enjoy a chocolate chip cookie in a mug in 2 minutes? Anything is possible!
Ingredients
1 tbsp margarine
2 tbsp brown sugar
1 tsp vanilla extract
pinch of salt
1 egg yolk
3 tbsp all-purpose flour
1.5 tbsp semi-sweet chocolate chips (you could substitute with milk chocolate chips, butterscotch chips, white chocolate chips or Smarties)
Directions
Place margarine in a microwave safe mug and melt, about 20-25 seconds on high.
Stir in brown sugar, vanilla extract and salt.
Add egg yolk and stir until well combined.
Stir in flour, and fluff in chocolate chips into batter.
Microwave on high for 45 seconds, and enjoy!
