Healthy Low-Fat Berry Muffins

This is my favourite Sunday recipe to do with my daughter. We make the muffins in the morning, with the left-over berries and they are ready just in time for brunch. Sometimes, we even have some left-over to bring in our lunch box on Monday!

Healthy Low-Fat Raspberry Muffins

 

Ingredients

2 tablespoon of butter
½ cup of maple syrup
1 egg
1 ½ cup of whole-wheat flour
1 teaspoon baking soda
½ teaspoon of salt
½ cup of Greek yogurt
1 teaspoon of vanilla extract
1 cup of berries (frozen or fresh)
1 apple grated
 ¼ cup of sliced almonds (optional)

 

Directions

 Preheat the oven at 400F.

 With an electric mixer, beat the butter and maple syrup together until fluffy.

 Incorporate the egg, beating well.

 Sift the dry ingredients together and combine with the butter mixture, blending well.

 Stir in the vanilla, yogurt ,and grated apple.

 Pour into muffin cups, sprinkle with the sliced almonds and bake for about 10-15 minutes or until a toothpick inserted in center comes out clean.

Makes about 1 ½ dozen m
