3 Easy Steps To Great Fall Vegetable Soup

A Warm Bowl of Comfort

My grandmother always had a pot of soup on the stove. Made with love, fresh herbs, and the best vegetables from her garden. Soup is comforting, easy to prepare, and could be a meal in itself if you add meat or beans and any grain, like rice or pasta.

1. Start with 6 to 8 cups of a good broth. 

2. Bring it to a boil and add about 2 cups of any vegetables you have, making sure to include garlic, onions, or leek. Top with fresh (or dry) herbs like thyme, oregano, sage, or rosemary.

3. Bring to a boil and let simmer for about 15 minutes until the veggies are perfectly cooked, to your taste. Season with salt and pepper and add any left over chicken, rice, or pasta.
